If you aren't a fan of peanuts try almonds or cashews. I roll these in a ball and make them like a thumprint cookie.
Nuts for Chocolate Cookies
- 2c peanuts or (almonds or cashews - soaked)
- 1/4 c melted coconut oil
- 1/2 rolled oats
- 2T maple syrup
- 1/4c cacao
- 2 dates soaked and pitted
blend 1 1/2 c of nuts with oil until almost smooth (if you have a vitamix use this instead of your food processor) add dates, maple syrup and blend a little more. Crush remaining nuts into biggish pieces and stir these in with 1/2 rolled oats - roll into balls and flatten out with a fork.
