Drying Dandelion Roots

It is weed harvest time again woohoo! Yarrow, Horsetail, Wild Roses, Fireweed and Dandelions are everywhere. I found a good video on youtube about harvesting and drying dandelion roots for "coffee" . *dandelion roots should be harvested in the spring or fall when they are highest in nutrients BUT, I'm doing some now because I'm itching to make ice nocream after trying the moo version at a book launch recently  - sooo good - I'll post a recipe soonish. I'm not sure if dehydrating will produce the same roasted flavour (will try).
